I hope you all had a wonderful January! We welcomed a beautiful baby boy (Haddon
Alexis) on January 8th and are completely smitten. We have also been incredibly busy.
So much so, that we rarely have time to take a break out of our day to cook a meal. So,
in order to make sure we all have enough energy for the day, we make it a point to stock
the fridge with fresh fruits and vegetables that can be tossed together for an easy and tasty
This Berry and Avocado salad is my go-to “mamma” meal. It’s packed with nutrients and flavor and it takes little to no time to put together leaving plenty of time for cuddles and baby kisses.
//Berry and Avocado Salad with Grilled Onions//
½ Large red onion
¼ Cup of sliced strawberries
¼ Cup of Blackberries, halved
½ Large avocado, cubed
2 Cups of mixed greens
2 Tablespoons of your favorite poppy seed dressing (or sweet dressing) of your choice
Preheat the oven to 400 degrees
Slice the onion, place on a baking sheet and drizzle with olive oil
Place the baking sheet in the middle rack of a 400 degree oven and bake for 40 minutes (mixing the onions every 10 minutes) and remove once translucent.
Toss all of the ingredients together (including the onion)
Drizzle salad dressing on top
